Honey Prawns

For those prawn-eater lovers, I have tried cooking it, very nice! Please take time to try it out this weekend .....

Serves 4
Preparation time: 20 minutes
Cooking time: 15 minutes


Ingredients

16 large raw prawns
Some cornflour, for dusting oil and for deep-frying
3 egg whites, lightly beaten
2 tablespoons cornflour, put in extra
2 tablespoons oil, put in extra
1/4 cup (90g) honey
2 tablespoons sesame seeds, toasted

Methods

1. Peel and devein the prawns, leaving the tails intact. Pat them dry and lightly dust with the cornflour, shaking off any excess. Fill a large heavy-based saucepan or wok one third full of oil and heat to 180 degreeC (350 degreeF), or until a cube of bread dropped in the oil became brown in 15 seconds.

2. Beat the egg whites in a clean dry bowl until soft peaks form. Add the extra cornflour and some salt and gently whisk until combined and smooth. Using the tail as a handle, dip the prawns in the batter, then slowly lower them into the oil. Cook in batches for 3-4 minutes, or until crisp and golden and the prawns are cooked. Remove with a slotted spoon, then drain on crumpled paper towerls and keep warm.

3. Heat the extra old and honey in a saucepan over medium heat for 2-3 minutes, or until bubbling. Place the prawns on a serving plate and pour on the honey sauce. Sprinkle with the sesame seeds and serve immediately with steamed rice.
