Sambal Mussels
What did I cook last weekend.... hmmm....
Ingredients A
1kg Mussels
150ml Water
1 tbsp Cornflour
Ingredients B
5 Dried chillies
4 Red chilies
2 cloves Garlic
1/2 tbsp Dried shrimps
1 slice Ginger
2 Candlenuts
2 slices Galangal
Seasonings
1 tsp Dark Soy Sauce
1 tbsp Oyster Sauce
1 1/2 tsp Sugar
1/2 tsp Salt
1/2 tsp Chicken stock seasoning
1/2 tsp Sesame Oil
Method
1. Soak mussels in salt water for 30 minutes to purge out any unwanted sand and debris inside the shells. Remove, rinse and drain.
2. Immerse dried chillies in hot water until soft, remove and drain. Peel skins of shallots and garlic. Rinse dried shrimps and drain.
3. Grind and mix Ingredients B together.
4. Heat up 6 tablespoons of oil. Add ingredients B mixture and fry till fragrant.
5. Add and stir in Seasonings and water. Bring to a boil. Add in mussels, stir and cook for 1 minute. Thicken with a mixture of cornflour and 2 tablespoons of water. Serve.
