Pork Fried Rice with Tomato Sauce

The second dish I cooked is.....

Ingredients
2 tbsp Cooking oil
3 cloves, peeled and crushed Garlic
300g (11 oz) Pork, finely sliced across the grain
1 Onion, peeled and diced
2 tbsp Thai fish sauce
3 tbsp Canned tomato puree
750g Cooked long-grain rice
1 Lemon
Ground white pepper

GARNISH
1 Cucumber, thinly sliced
1 sprig Coriander leaves (cilantro)


Method
1. Heat oil in a wok and brown garlic. Add pork and saute for about 3 minutes until lightly cooked, then add onion, fish sauce and tomato puree. Stir well, adding a little water and oil if mixture is too dry.

2. Turn up heat and saute for another 3 minutes, then add rice and toss until well mixed. Season to taste with pepper.

3. Dish out and serve garnished with cucumber and coriander leaves. Squeeze lemon juice over rice for an extra tangy flavour.
