Chilli Crab

This was what I have cooked last Saturday....

Ingredients

1 kg meat crab
2 eggs
1 stalk coriander (optional)
1 tbsp cornflour
few stalks of Chinese lettuce


Spices
15 cloves garlic
40g old ginger
15 dried chillies
5 candlenuts (buah pelaga)

Seasonings A
750ml soup stock or water
1 tbsp oyster sauce
4 tbsp chilli sauce
1 tbsp sugar
1 teaspoon chicken seasoning powder
1 tbsp light soya sauce

Seasoning B
1 tbsp cooking wine (huadiao wine)

Methods

1. Remove crab shell, extract internal organs, wash and drain dry. Cut crab in half from centre of belly and break crab claws with the back of a knife.

2. Cut coriander into sections. Break eggs and remove garlic cloves and skin of old ginger. Soak dry chillies in hot water till they are soft. Remove and drain dry.

3. Grind and mix spices together.

4. Heat up 4 tablespoons of oil in pot, fry ground spices till fragrant. Add crab and stir-fry momentarily, then add Seasonings A. Stir well, cover pot with lid and cook for 10 mins.

5. Remove lid and thicken 2 tablespoons of water with cornflour. Add eggs and stir to boil. Pour cooking wine (Seasoning B) into the dish and place coriander and lettuce as garnishing. Serve.
