Easy Sour Prawn Soup
Ingredients
6 medium prawns
2 pineapple rings (from the can, keep the syrup for later use)
1/2 green bell pepper
1/2 red bell pepper
sliced shallot
sliced ginger
Seasoning
Rice vinegar or Zhenjiang vinegar
Salt
Sugar
Fish sauce
Method
1. Trim off the antennae and legs of prawns. Cut along the back of the prawns and devein. Scald in boiling water and strain. Set aside.
2. Cut bell peppers and pineapple into small pieces.
3. In a pot, heat some oil and stir fry shallot and ginger until fragrant. Add water and syrup from pineapple canned. Bring to the boil. Put in the prawns, bell peppers and seasoning. Stir well. Put in the pineapple at last and serve.
