Pineapple Fried Rice

Ingredients

1 pineapple
100g shrimps
1 stalk coriander
2 tbsp minced onions
1 tbsp minced garlic
50g crab meat
600g rice
1 tbsp diced spring onions
30g chicken floss or pork floss

Seasonings
1 tbsp turmeric powder
1 tbsp fish sauce
1/2 teaspoon salt
some black pepper

Method

1. Slice off the top of the pineapple, then dig out pineapple flesh with a small knife. Cut 2 tablespoons of pineapple flesh into dices. Reserve the pineapple shell and the pineapple top.

2. Shell prawns and devein. Rinse and drain.

3. Cut corianders into sections.

4. Heat up oil in the pot, baste shrimps for a while. Remove and drain.

5. Heat up 5 tablespoons of oil in the pot, fry minced onions and minced garlic till fragrant. Add diced pineapple, crab meat and shrimps into pot and fry well. Stir-fry Seasonings and rice evenly with high heat till fragrant. Remove.

6. Pre-heat oven till 200 degree celcius. Fill fried rice into the pineapple and cover with the pineapple top. Then put on the grill tray, transfer into oven and bake for 10 minutes. Remove and uncover.

7. Sprinkle coriander, diced spring onions and pork floss on top. Serve.
